🤔 What is durian cheesecake?

Durian cheesecake is a rich, creamy dessert made with durian fruit and a classic cream cheese base. It tastes sweet, soft, and has a melt-in-your-mouth texture.

❤️ A note from Praew

The bottom layer of cheesecake is made by mixing crushed cookies with melted butter and pressing the mixture into the base of the pan. It firms up in the fridge and holds the creamy filling on top.

The top layer is the durian cheesecake mixture. Once chilled, it sets into a soft but sliceable texture.

It’s a fusion dessert you’ll find in Southeast Asian-style baking, especially in places where the king of fruits is loved: Thailand, Malaysia, Singapore, Indonesia, and even Japan, where fluffy Japanese cheesecakes are a big hit.

🍚 Ingredient tips & substitutes

  • Durian Use ripe durian for the smoothest texture and best flavor. I used Thai Monthong, but different varieties will affect the final taste. Add more or less durian depending on how strong you want the flavor. Use leftovers to make durian cake, chips, or durian ice cream!
  • Sweetened condensed milk Adds sweetness and richness in one step. You can adjust the amount to taste.
  • Whipping cream Gives the cheesecake a light, airy texture when whipped.
  • Cream cheese The base of the cheesecake; use full-fat for the best texture and flavor.
  • Cookies Crushed cookies form the crust. Digestive biscuits or graham crackers both work well.
  • Melted butter Holds the crust (bottom layer) together and adds richness.
  • Gelatine Helps the cheesecake set without baking. Bloom it properly in water before mixing.
  • Water Used to bloom the gelatine so it dissolves smoothly into the mixture.
