No Bake Durian Cheesecake Recipe

This no bake durian cheesecake is rich, creamy, and full of real durian flavor. It’s easy to make, sets in the fridge, and requires no oven!

Ingredients

  • ½ tbsp gelatin
  • 2 tbsp cold water
  • 3 oz crushed cookies digestive biscuits, graham crackers, etc.
  • 5 tbsp melted butter
  • 4 oz durian flesh
  • 10 oz cream cheese
  • ½ cup whipping cream
  • 3 tbsp sweetened condensed milk

Instructions

  • Bloom the gelatin: Stir the gelatin into cold water and let sit for a few minutes to thicken.
  • Make the crust: Mix crushed cookies with melted butter until combined. Press into jars or ramekins and chill in the fridge.
  • Mash the durian: Use a fork to mash the durian flesh until smooth. Remove any seeds or large fibers.
  • Mix the cream cheese: Beat the cream cheese (room temp) until smooth. Use a hand mixer or a whisk.
  • Add durian and condensed milk: Fold in the mashed durian and sweetened condensed milk until combined.
  • Whip the cream: In another bowl, whip the cream until soft peaks form. A hand mixer makes this easier.
  • Combine: Gently stir the whipped cream into the durian mixture until smooth.
  • Melt gelatin: Microwave the bloomed gelatin for 10–15 seconds until melted, then stir it in.
  • Fill the jars: Spoon the filling over the crust and smooth the tops.
  • Chill: Cover and refrigerate for 4 hours or overnight. Top with fresh durian before serving.
