Hoisin pork is pork marinated in hoisin sauce, a sweet and salty Chinese-style sauce made from fermented soybeans, garlic, sugar, and spices. It gives the pork a bold, caramelized, slightly tangy flavor when grilled or baked.

Tip: You can also use different cuts of pork like tenderloin, shoulder, or ribs, just adjust the cooking time and keep an eye on the doneness. Lean cuts may cook faster while fattier cuts stay extra juicy.

  • Pork chops Bone-in pork loin chops are the best choice for grilling, as they cook quickly while staying juicy. They’re tender with a good fat cap for flavor, and hold up well to bold marinades like hoisin. Choose chops about 1–1.5 cm thick for best results. You’ll also love these Vietnamese pork chops!
  • Hoisin sauce You can find hoisin sauce in any Asian grocery store, larger supermarkets in the international foods aisle, or order it online if needed. Try my homemade version if you have time!
  • Sesame oil Adds a subtle nutty aroma.
  • Soy sauce Adds a salty flavor to the marinade.
  • Vinegar Helps balance the sweet and savory hoisin marinade. Rice vinegar is the top choice for its mild, slightly sweet flavor that complements Asian dishes. Apple cider vinegar is a good alternative with a gentle tang, while distilled white vinegar can work if you want a sharper note, though it’s less traditional.
  • Water Loosens the marinade so it coats evenly.
  • Sugar Enhances caramelization for that irresistible sticky glaze on the grill.

Ingredients

  • tbsp hoisin sauce
  • ½ tbsp soy sauce
  • ½ tsp rice vinegar
  • ¼ tsp sesame oil
  • 2 tbsp water
  • 1 tsp sugar
  • 1 clove garlic minced
  • 2 pork chops

Instructions

  • In a mixing bowl, combine hoisin sauce, soy sauce, sugar, rice vinegar, garlic, sesame oil, and water.
  • Add pork chops and coat well. Marinate for 1 hour or up to overnight in the fridge.
