Char Siu Chicken Recipe

Juicy grilled char siu chicken thighs sliced and served with bok choy.
Juicy char siu chicken made with a sticky red marinade and grilled to perfection. Perfect with rice, noodles, or just on its own.

  • Mixing bowl for making and combining the marinade

  • Grill or oven
  • Brush or spoon to baste with extra marinade while cooking

Ingredients

Instructions

  • Make the marinade. Stir all marinade ingredients in a bowl until smooth and the sugar is dissolved.
  • Marinate the chicken. Add chicken thighs and coat well. Cover and chill for at least 4 hours or overnight.
  • Bring to room temp. Let the marinated chicken sit out for 15 minutes before cooking.
  • Cook the chicken. Grill over low heat, skin-side down first, flipping occasionally until caramelized. Or roast at 180°C (350°F), flipping halfway. Broil 1–2 minutes at the end for extra color.
  • Slice and serve. Rest the chicken for 5 minutes, then slice and serve warm.
