It starts with pan-frying shrimp with the heads on. Leaving the heads on gives the dish a deeper, richer flavor because the oil from the shrimp heads infuses into the cooking oil.

Then we’ll make a garlic sauce that’s full of flavor with oyster sauce, soy sauce, and just a pinch of sugar to balance out the saltiness. The sauce is cooked in the same oil used to fry the shrimp, which is now packed with that savory, briny shrimp flavor.

The shrimp is also coated in a light layer of tempura flour (or cornstarch) so you get a crispy edge with your first bite and a juicy center when you chew.

Ingredients

  • ¼ cup cooking oil
  • 8 shrimp deveined, heads-on
  • 3 tbsp tempura flour or cornstarch
  • 5 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp water
  • ½ tsp sugar

Instructions
