What is char siu sauce

Char siu sauce is a sweet, savory Chinese barbecue marinade used for pork, chicken, or other meats. It tastes like a mix of sweet and savory, with hoisin, soy, and five-spice. The red color comes from food coloring or fermented bean curd, giving char siu its signature red look.

💖 A note from Praew

I came up with this homemade marinade when my husband and I were craving char siu fried rice. We marinated a nice piece of pork, grilled it up, and it turned out so good that we had to try it on chicken, too.

We had some sauce leftover, so we tossed that on a few chicken thighs, and both came out amazing! If you double or triple this recipe, you can easily prep different meats ahead of time and use them throughout the week.

The sauce takes just a few minutes to mix up, it’s made with traditional ingredients, and the flavor is spot-on.

The result tastes just like something you’d order at a great Chinese BBQ shop, only fresher and way better than anything store-bought. — Praew ♡

👩‍🍳 How to make char siu marinade

Step 1: Whisk all ingredients together until the sugar has dissolved and the marinade is smooth.

Step 2: You can use it immediately or let it sit for 5–10 minutes to let the garlic and five-spice really soak in. Use it to marinate pork, chicken, or your favorite meat. For best results, let the protein marinate for at least a few hours or overnight in the fridge.
